Quick and Healthy Lunch Ideas for Work
A housewife or even a working class woman has the duty and obligation of making a delicious lunch for her family. And it gets frustrating when the same perpetuated question comes to mock her – What am I going to make for lunch today? Yes, every day we have to face that question and the demands of the family members have frazzled and the whole idea of cooking makes our heads spin. Well, here are some easy-to- make, delicious and quick recipes.
Here is a basic list of what you’ll need:
Onions (Med-sized. Sliced)
Tomatoes (Med-sized. Chopped)
Chillies (Slit)
Garlic (4 cloves, crushed)
Ginger (1 inch, thinly chopped)
Curry Leaves
French beans (3/4 kg, washed and julienned)
Potatoes (6 med. Chopped)
Desiccated Coconut (2 tbsps.)
Chicken (1 kg, pre-cut)
(Qty. as per recipe)
Goda Masala
Turmeric powder
Chilli Powder
Coriander powder
Salt
White Pepper Powder
Dry Mango Powder
Oil
Spices ( cardamoms, bay leaf, cinnamon stick, cloves, peppercorns)
French beans bhaji:
Heat two tablespoons of oil in an aluminium vessel. Fry a sliced onion until golden brown. Add the desiccated coconut and let it cook for two minutes. Add two teaspoons of white pepper powder and salt to taste and mix well. Finally, throw in the French beans and mix well. Add a little water and cover the vessel for about 10 minutes until cooked.
Potato Bhaji:
In a wok-like vessel, heat oil and throw in some curry leaves. Put in 3 chillies, ginger and garlic and stir about for a minute. Add two onions and cook till transparent. Put in the two tomatoes and cook for three minutes. Put 2 teaspoons of goda masala, 11/2 teaspoon chilli powder, 1 teaspoon turmeric powder and salt to taste. Mix well and add the potatoes. Cover and cook on low-medium heat. No need to add water. Cook for about 15 minutes.
Chicken Curry –
Lightly stir fry chicken in a pan and keep aside in a container/vessel retaining it’s heat. Take a new vessel and heat oil. Add a few spices in and then put a little curry leaves in. Let them pop about and then throw in chillies, garlic and ginger. As before, add onions and tomatoes and cook till the onions turn golden brown and the tomatoes are slightly squishy. Put in 1 teaspoon of turmeric powder, 2 teaspoons of goda masala, 2 teaspoons of chilli powder, 2 teaspoons of coriander powder, 1 teaspoon of dry mango powder and salt to taste. Mix well and cook for about a minute and then throw in the partially cooked chicken. Add water with a proportion of a little under ¾ of the vessel and let the chicken fully cook and gravy thicken.
